Origins: The origins of Kalia chicken are closely tied to the cooking traditions of Bengal, Odisha, and Bangladesh, regions known for their rich and diverse food cultures. Historically, the dish is believed to have been influenced by Mughal cuisine, which introduced rich, aromatic spices and cooking techniques. The Mughals, who ruled large parts of India from the early 16th to the mid-18th century, were known for their lavish and flavorful dishes, often featuring intricate spice blends and innovative cooked methods.

The term "Kalia" or "Kaliya" generally refers to a rich, spicy curry often made with meat, fish, or vegetables. The word "Kalia" comes from Persian and Urdu, where it typically means a rich stew or curry, usually cooked with a variety of spices to create a deep and complex flavor profile. 

Cultural Significance: In Bengali and Odia cultures, Kalia chicken is often associated with festive occasions and special celebrations. It is considered a luxurious dish, frequently prepared for weddings, festivals, and other significant gatherings. The rich and hearty nature of the dish, with its interesting  spice blend makes it a centerpiece in traditional feasts.

  • Ingredients: Black pepper, Cilantro, Coriander, Cumin, Garam masala, Garlic, Ginger, Onion, Paprika, and Turmeric.

Recipe Kalia Chicken


500 Chicken pieces

4 Tbsp Yoghurt 

1/4 Cup oil 

1/2 tsp Cumin seeds 

2 Medium onions chopped 

2 tsp Kaliya spice

1 Tbsp Minced garlic

1/2 Cup water

3 Tbsp Fresh coriander chopped

3 Green chillies chopped (optional)

Salt to taste


  1. Heat oil in a pan or wok. Add Cumin seeds.
  2. Add onions and sauté until brown.
  3. Add minced garlic and Kaliya spice.
  4. Cook for 2 minutes, adding water.
  5. Add chicken pieces and cook for 5 minutes.
  6. Add yoghurt and cook until pan leaves the oil.
  7. Add 1/2 cup warm water. bring to boil and simmer until chicken turns tender.
  8. Top up with green chilis (optional) and cilantro or fried onion (optional).
  9. Serve with rice, roti or naan.
